For example, more expensive fish and delicacies should be placed in the middle of the display (and at eye level if it is a multi-level counter) where it attracts attention in the first place. There should also be a fish that is in the greatest demand. Cheap varieties are shifted to the edge of the counter.

Each type of product should be separated from the other: smoked meats and fresh fish should not be placed side by side, seafood should also be placed separately. Lighting plays an important role. In practice, it is not customary to choose lamps for showcases with a blue spectrum for food products; fish will look most advantageous in the light of lamps with a light yellow or pink spectrum.

Some stores use aquariums with live fish. The most resistant to transportation and maintenance in large groups in aquariums are species such as crucian carp, river perch, bream, burbot, pike perch, and trout.

The opening of a business, taking into account the costs of repairing the premises, or buying a kiosk or pavilion, as well as the starting batch of products, will take about 600 thousand rubles.

At the same time, you should also be aware of the risks that accompany the trade in a perishable product. For example, if there is insufficient demand for freshly caught fish, markdowns may need to be made in order to be able to sell the product before it expires. Sometimes you even have to throw away the damaged product. To minimize such risks, logistics should be taken seriously and take into account seasonal peaks and troughs in demand.
